Favourite food: Sushi (すし, 寿司, 鮨, 鮓, 寿斗, 寿し, 壽司) is a Japanese food consisting of cooked vinegared rice (shari) combined with other ingredients (neta), usually raw fish or other seafood. Neta and forms of sushi presentation vary, but the ingredient which all sushi have in common is shari.

The common ingredient in all types of sushi is vinegared sushi rice. Fillings, toppings, condiments, and preparation vary widely.
Note that due to rendaku consonant mutation, sushi is spelled with a z instead of an s whenever a prefix is attached, such as in nigirizushi for instance.

Steps

1Squeeze the lemon juice over the avocado to prevent browning.
Cover a bamboo rolling mat with plastic wrap. Cut nori sheets in half crosswise. Lay 1 sheet of nori, shiny side down, on the plastic covered mat. Wet your fingers with water and spread about 1/2 cup of the rice evenly onto the nori.

  • Juice of 1/2 lemon
  • Optional mix-ins like 1 medium avocado
  • 4 sheets nori

2Sprinkle the rice with sesame seeds. Turn the sheet of nori over so that the rice side is down. Place 1/8 of the cucumber, avocado and crab sticks in the center of the sheet.

3Grab the edge of the mat closest to you, keeping the fillings in place with your fingers, and roll it into a tight cylinder, using the mat to shape the cylinder. Pull away the mat and set aside.

  • 1/2 batch sushi rice
  • 1/3 cup sesame seeds
  • 1 small cucumber

4Cover with a damp cloth. Repeat until all of the rice has been used. Cut each roll into 6 pieces. Serve with pickled ginger, wasabi and soy sauce.

Sushi is traditionally made with medium-grain white rice, though it can be prepared with brown rice or short-grain rice. It is very often prepared with seafood, such as squid, eel, yellowtail, salmon, tuna or imitation crab meat. Many types of sushi are vegetarian. It is often served with pickled ginger (gari), wasabi, and soy sauce. Daikon radish or pickled daikon (takuan) are popular garnishes for the dish.
